Mint Cocktail - Belle Collins
Mint is one of my favorite herbs to grow. It's an easy-to-grow, hardy, perennial herb that is delicious in smoothies, tasty on toast and fabulous in a cocktail!
What to add mint to your garden? Now is a great time to plant it! Be sure to give it plenty of room to grow, protection from late afternoon sun and well draining soil. Mint doesn't play well with others, so find a nice wide pot to designate as your mint pot - whatever you do, do not put it in your raised bed.

Mint does best the more you cut it back, so let's make a cocktail!
Belle Collins
Ingredients:
2 Fresh mint sprigs, plus extra for garnish
1 3/4oz Gin
3/4oz Lemon Juice
1 tsp Simply Syrup
Crushed Ice
Sparking Water
1. Muddle the mint sprigs
2. Place the mint in your favorite glass and pour in the gin, lemon juice, and simple syrup
3. Add the crushed ice
4. Top off with sparkling water, stir gently, and garnish with more fresh mint.
5. Enjoy your weekend!
*For an NA option omit the gin or substitute for one of the many NA gin options available!
